After a heavy night of drinking, one of my hang-over cures is eating healthy. Let’s start with breakfast.

This stable scrambled eggs recipe can be dressed up with toast, fresh herbs, some bacon or sausages.

Scrambled Eggs

Things

2 eggs, room temperature
3 tbsp milk
1 tsp of butter
3 fresh basil leaves, chopped
Pinch of salt and pepper
1 tsp of butter, extra

The Do Bit

Whisk all ingredients together in a small bowl.

Melt the extra butter in a frying pan on low.

Once butter is melted, add the mixture all at once.

This part is important!
Don’t whisk or agitate your eggs too much. Every ten seconds or so, gently draw the eggs into the centre of the frying pan with a spatula. The uncooked egg will flow in the take the place of the cooked egg.

If you overwork your eggs the will “weep” and separate, leaving your eggs rubbery and dry. Keep using this method until the eggs have reached the
consistency you want.

Serve immediately.

Sophie’s Notes
This mixture is pretty easily expanded. You can also add
tomatoes, feta, onion, olives, whatever you like! Do be aware
that moist ingredients will throw off your cooking times.
